I ordered this early in the pandemic to support a small business, but after discovering a forgotten pack of Tasso in the freezer and enjoying it cooked up with collards, I’m back to order more. Each meat was distinct, and each delicious. I loved that the jerky didn’t have any noticeable sugar, since the meat and seasonings combined with expert smoking left the texture and flavor right where you want them without the crutch of sugar. The sausages brought my gumbo to the next level (I’m a good cook but before these meats never quite got to the ‘tastes like I’m in New Orleans’ flavor when I try to cook this style of food), and the tasso—wow! Cooked in the greens with a little bit of chicken stock to moisten everything let’s the deep porkiness and perfect smoke level come through.
Great meats. The Taso and the Andouille are superb and the Smoked Sausage and Jerky are a close second. All this for a reasonable price.
