Shipping & Product Information

     We ship complete orders as soon as the each item in an order is produced, smoked, packaged, and collected.  Generally we smoke batches of each item that we offer each week, so it may take a couple of days to complete and order.  We only ship fresh from the smoker, vacuum sealed and not refrigerated.  We ship 2 Day and no longer because it is a fresh product.  While we primarily use 2 day shipping from FedEX, USPS no longer reliably accepts parcels from FedEX with P.O. Box addresses.  We encourage you to have FedEx packages delivered to the nearest FedEX location for pickup.  Otherwise, will deliver all packages with P.O. Box addresses through USPS.  We will not replace goods that are not delivered in a within the guaranteed time by either shipper. 

     All smoked items that we offer for shipping are fully cooked and are shelf stable, vacuum sealed, and not refrigerated for up to 10 days from the date of smoke.  Products in a vacuum sealed bag can be refrigerated up to 4 months, or frozen indefinitely.  

     If you discover that the seal has broken during the course of delivery, and you do not plan to use the item immediately, please call us at 1-985-652-9990 or email us at so that we can discuss a solution or replace the product.  Just because the seal is broken doesn't mean the item has spoiled, but for future freezing or refrigeration, the quality will be compromised.
