Our Andouille is the cornerstone of our business.  It is all natural pork, hand butchered and coarsely ground.  We use only natural beef casing.  No preservatives, additives, or artificial flavors.  It is smoked for hours with real wood smoke.  It is fully cooked.  You will recieve 1 stick of andouille per order which weighs 1-1.25 pounds as we make all our products by hand. 

All smoked items that we offer for shipping are fully cooked and are shelf stable, vacuum sealed, and not refrigerated for up to 10 days from the date of smoke. Products in a vacuum sealed bag can be refrigerated up to 4 months, or frozen indefinitely. If you discover that the seal has broken during the course of delivery, and you do not plan to use the item immediately, please call us at 1-985-652-9990 or email us at waynejacobssmokehouse@gmail.com so that we can discuss a solution or replace the product. Just because the seal is broken doesn't mean the item has spoiled, but for future freezing or refrigeration, the quality will be compromised.

    This is the Best Andouille I have ever found. Hand crafted with care. It makes any Cajun dish shine. It is absolutely worth the price.

    Have been buying this product since 1970s. Still same excellent quality and flavor. Have tried andouille from at least five other local suppliers just to see....always some back here. So glad that WJS ships now.

    I've tried a number of suppliers over the years but this one for the win. Actually I've rarely found any from the area that I did not like but always come back to Wayne Jacobs. If you're making a gumbo you may want to alter the spice as this sausage could be all you need.

    I no longer live in Louisiana--sad, I know! But when I am home visiting this shop on 'river road' is always on my 'must visit' list! I gotta get me some of dat andouille to take home for my gumbos! I am so happy when they started being able to ship. Now, I order online. PS-- do NOT get the andouille from those no account pretenders on Airline Hwy!!! It is not as good.

    Jacobs “river road” andouille is our favorite for birthday gifts for those not in driving distance. And even the long Christmas delay due to demand was worth it.

    I have been a customer for many years but live a long way away. WJS shipping is quick and painless. This is the best Andouille I have ever had, just wish I lived closer so I could enjoy more often.
