Our Andouille is the cornerstone of our business.  It is all natural pork, hand butchered and coarsely ground.  We use only natural beef casing.  No preservatives, additives, or artificial flavors.  It is smoked for hours with real wood smoke.  It is fully cooked.  You will recieve 1 stick of andouille per order which weighs 1-1.25 pounds as we make all our products by hand. 

All smoked items that we offer for shipping are fully cooked and are shelf stable, vacuum sealed, and not refrigerated for up to 10 days from the date of smoke. Products in a vacuum sealed bag can be refrigerated up to 4 months, or frozen indefinitely. If you discover that the seal has broken during the course of delivery, and you do not plan to use the item immediately, please call us at 1-985-652-9990 or email us at waynejacobssmokehouse@gmail.com so that we can discuss a solution or replace the product. Just because the seal is broken doesn't mean the item has spoiled, but for future freezing or refrigeration, the quality will be compromised.

    This is so good I have to have it in the freezer to add to Camellia red beans and rice. It is worth the trouble to have it shipped.

    I have been buying Wayne Jacob's andouille sausage for 15-20 years. There is none better!!! I have tried others and they just do not compare to the taste and quality of this sausage.

    I am going back for my second order from Wayne Jacobs. This is without a doubt the best andouille I have ever had and all my friends will attest that it is the best they have ever eaten as well. You will not be disappointed.

    It’s just such good andouille. Tried other around me in New Jersey which are fine but nothing compared to proper Louisiana andouille. It’s brought my gumbo to another level. Even slice it up and put a little seat on it and eat it just like that is amazing.
