Product Overview

Our Tasso is a highly seasoned and highly smoked ham.  It is all natural pork with no added preservatives, fillers, or artificial flavoring.  It is smoked with natural wood only.  It is used sparingly to flavor dishes or to help to boost the smoke flavor in a recipe.  To get the most flavor from tasso, it is helpful to saute it a little with your cut vegetables in the beginning of the process of cooking a dish.  

Warranty Information

All smoked items that we offer for shipping are fully cooked and are shelf stable, vacuum sealed, and not refrigerated for up to 10 days from the date of smoke. Products in a vacuum sealed bag can be refrigerated up to 4 months, or frozen indefinitely. If you discover that the seal has broken during the course of delivery, and you do not plan to use the item immediately, please call us at 1-985-652-9990 or email us at waynejacobssmokehouse@gmail.com so that we can discuss a solution or replace the product. Just because the seal is broken doesn't mean the item has spoiled, but for future freezing or refrigeration, the quality will be compromised.

    I have been buying this since about 2005, always have some ready to use. My wife surprised me and ate what was in the fridge just like it was.

    This is my second order of tasso. It is very rich tasting and can be used in limited quantities to add smokey depth to any number of dishes.

    There are many places that sell what they call Andouille. But Wayne Jacob's is the real deal. You have not lived if you haven't had Oyster and Andouille gumbo, or Smoked Turkey and Andouille gumbo, with everything coming from Wayne Jacob's. Their Tasso added to white beans or red beans and rice is wonderful! Their tasso simmered with green onions and added to an omelet is terrific. Wayne Jacob's Smokehouse is in the center of the Andouille Cajun-German Coast centered around Laplace. Their andouille is to this type of sausage exactly like Champagne is to sparkling wine. The original the authentic, the best there is.
